Crispy Fried Pork with Fennel Salad

*Delicious crispy fried pork served with a refreshing fennel salad. Preparation time: 1 hour. Serving size: 4 servings.*Ingredients:
- 800 g pork tenderloin- 2 dl all-purpose flour
- 2 eggs
- 3 dl panko breadcrumbs
- 1 l oil for frying
- Salt and pepper to taste
Fennel Salad:
- 1 fennel bulb- 1 apple
- 1 dl fresh dill
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Slice the pork tenderloin into thin pieces.2. Season the pork with salt and pepper.
3. Prepare the breading: Place the all-purpose flour, beaten eggs, and panko breadcrumbs in three separate bowls.
4. Dip the pork slices first in the flour, then in the egg, and finally in the panko breadcrumbs.
5. Heat the oil in a deep frying pan to 180°C (356°F).
6. Fry the pork slices for about 4-5 minutes until golden brown and crispy. Drain on paper towels.
7. Prepare the fennel salad: Thinly slice the fennel and apple. In a bowl, combine the fennel, apple, and dill.
8. Add the olive oil, lemon juice, salt, and pepper to the salad and mix well.
9. Serve the crispy fried pork with the fennel salad on the side.
