This delicious and filling vegetable pasta is a perfect choice for a weeknight dinner. It comes together quickly and is bursting with flavor! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli) - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain, reserving a little cooking water.2. Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté for about 3-5 minutes until soft.
3. Add the crushed garlic and cook for another minute.
4. Add the bell pepper and zucchini to the pan, and sauté for about 5-7 minutes until the vegetables are tender.
5. Stir in the cherry tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes until the tomatoes are softened.
6. Combine the cooked pasta with the vegetable mixture in the pan. Mix well, adding a little reserved cooking water if necessary for moisture.
7. Serve the pasta topped with grated Parmesan cheese and fresh basil, if desired.
