A hearty and flavorful dish featuring tender reindeer shank, noodles, and sautéed chanterelles, served with a creamy beet puree.

Ingredients:
- 500 g reindeer shank
- 500 g noodles
- 100 g chanterelles
- 100 g carrots
- 2 dl demi-glace
- 1 dl dark rum
- 3 pieces of beets
- Salt
- Black pepper
Instructions:
1. Brown the reindeer shank in a pan until the surface is beautifully golden.
2. Boil the shank in a pot for about 30 minutes until tender. Season with salt and black pepper.
3. Prepare the noodles according to the package instructions.
4. Sauté the chanterelles in a pan until they are golden brown.
5. Peel and roast the beets in the oven at 200 degrees Celsius for about an hour until soft. Let cool and peel.
6. Place the roasted beets in a blender, add a splash of oil and salt, and puree until smooth.
7. In a bowl, combine the cooked noodles, reindeer shank, sautéed chanterelles, and carrots.
8. Add the demi-glace and dark rum to the mixture and stir well.
9. Serve the noodle salad topped with or alongside the beet puree. Enjoy!
