Ingredients:
- 800 g reindeer shanks - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 dl red wine
- 5 dl beef broth
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
Roasted Vegetables:
- 4 large potatoes, diced
- 3 carrots, sliced
- 2 beets, diced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh rosemary for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Sear the reindeer shanks until browned on all sides. 2. Add the chopped onion and crushed garlic, sauté until softened.
3. Pour in the red wine, bring to a boil, and let it reduce slightly.
4. Add the beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil.
5. Cover the pot and simmer on low heat for about 2.5 hours, until the meat is tender.
6. Meanwhile, preheat the oven to 200°C (392°F). In a bowl, toss the vegetables with olive oil, salt, and pepper.
7. Spread the vegetables on a baking sheet and roast for about 30 minutes, until golden brown and tender.
8. Serve the reindeer shanks alongside the roasted vegetables, garnished with fresh rosemary.
