This delicious and nutritious vegetable pasta is quick to prepare and perfect for a weeknight dinner.

Serving size: 4 servings

Ingredients:

- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 50 g Parmesan cheese, grated (optional)
- Fresh basil leaves for garnish

Instructions:

1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and bell pepper, cooking for about 3 minutes.
4. Stir in the sliced zucchini and cherry tomatoes. Cook for another 5-7 minutes until the vegetables are tender.
5. Season the vegetable mixture with basil, salt, and black pepper. Toss in the cooked pasta.
6. Serve warm, topped with grated Parmesan cheese and fresh basil leaves.
