A delicious twist on traditional carbonara featuring reindeer meat.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g spaghetti
- 150 g bacon
- 200 g cold-smoked reindeer mince
- 2 cloves garlic
- 2 dl cream
- 2 dl chopped parsley
- 4 egg yolks
- Black pepper
- Parmesan cheese
Instructions:
1. Chop the garlic finely and slice the bacon into strips.
2. Chop the fresh parsley.
3. Cook the spaghetti in salted water until almost tender, reserving about 1 dl of the cooking water.
4. In a pan, cook the bacon in its own fat with the garlic, then add the reindeer mince and sauté for a few minutes.
5. Pour in the cream and add the chopped parsley, simmering for a bit.
6. Separate the egg yolks and mix in black pepper.
7. Combine the cooked pasta with the sauce, adding reserved cooking water as needed, and mix well.
8. Quickly stir in the egg yolks so they slightly thicken from the heat.
9. Grate Parmesan cheese into the mixture.
10. Serve on plates, garnished with additional reindeer mince and parsley.
