Ingredients:
- 1 medium cauliflower
- 2 tablespoons olive oil
- 1 onion
- 3 garlic cloves
- 1 tablespoon curry paste
- 1 liter vegetable broth
- 100 ml cream (or plant-based alternative)
- Salt and pepper to taste
- Grated mozzarella cheese (for serving)
- Chopped chives (for serving)
Instructions:
1. Preheat the oven to 200°C (390°F).
2. Wash and chop the cauliflower into small florets. Place the florets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20-25 minutes until golden brown.
3. Peel and chop the onion and garlic. Sauté the onion in a pot over medium heat until soft. Add the garlic and curry paste, and sauté for another minute.
4. Add the roasted cauliflower to the pot and pour in the vegetable broth. Simmer on low heat for about 15 minutes.
5. Blend the soup with an immersion blender or in a blender until smooth.
6. Stir in the cream and season with salt and pepper. Heat through once more.
7. Serve hot, topped with grated mozzarella cheese and chopped chives. Enjoy!
