Ingredients:

- 400 g potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 100 g feta cheese
- 1 dl cherry tomatoes, halved
- 1 dl fresh basil, chopped

Instructions:

1. Peel and cut the potatoes into evenly sized cubes.
2. Boil the potatoes in salted water for about 10 minutes until they are just tender.
3. Drain the potatoes and transfer them to a bowl. Add olive oil, salt, black pepper, and rosemary. Mix well.
4. Spread the seasoned potatoes on a baking sheet and roast in the oven at 200 °C for about 15-20 minutes, until golden and crispy.
5. Remove the potatoes from the oven and top them with feta cheese and cherry tomatoes.
6. Garnish with fresh basil before serving.
