Ingredients

- 1 boiled potato
- 300 g (organic) chicken breast fillet
- Dried bread (or breadcrumbs)
- About 1 cup of milk
- 1 (organic) egg
- Grated Parmesan cheese
- Salt
- Pepper
Yogurt Sauce:
- Greek yogurt (or plain yogurt)
- 1 tsp honey
- Salt and pepper
- Grated ginger
- Fresh basil and chives, chopped
- A splash of good olive oil
- (Grated cucumber)

Instructions

1. Mash the boiled potato and mix in the milk.
2. Finely chop the chicken breast using a sharp knife or food processor.
3. Combine the chopped chicken, potato mash, egg, and grated Parmesan. Season with salt and pepper.
4. With wet hands, shape the mixture into small balls, each weighing less than 20 grams.
5. Roll the meatballs in breadcrumbs before placing them on a baking tray.
6. Bake the meatballs at 200°C (400°F) for about 20 minutes, turning them once during baking.
7. Prepare the yogurt sauce by mixing all the ingredients together and letting it sit in the refrigerator to develop flavor.
8. Serve the meatballs with the sauce alongside a fresh salad or roasted potatoes.
