Ingredients:
- 1 boiled potato
- 300 g (organic) chicken breast
- Stale bread or breadcrumbs
- A little over 1 cup of milk
- 1 (organic) egg
- Grated Parmesan cheese
- Salt
- Pepper
- Fresh herbs (e.g., basil, chives)
- Grated lemon zest (optional)
- Sun-dried tomatoes (optional)
Yogurt Sauce:
- Greek yogurt or plain yogurt
- 1 tsp honey
- Salt
- Pepper
- Grated ginger
- Fresh herbs (e.g., basil, chives)
- Good quality olive oil
- Grated cucumber (optional)
Instructions:
1. Mash the boiled potato and add the milk. You can also add stale bread or breadcrumbs.
2. Finely chop the chicken breast with a knife or in a food processor.
3. Combine the chopped chicken, potato mash, egg, and grated Parmesan cheese. Season with salt, pepper, and fresh herbs if desired.
4. With wet hands, shape the mixture into small balls, about 20 grams each. Roll the meatballs in breadcrumbs or panko.
5. Place the meatballs on a baking sheet and bake at 200°C (400°F) for about 20 minutes, turning them once during cooking.
6. Prepare the yogurt sauce by mixing all the sauce ingredients together and let it marinate in the refrigerator.
7. Serve the chicken meatballs with the yogurt sauce and a fresh salad or fried potatoes.
