Ingredients:
- 200 g butter
- 2 dl sugar
- 4 eggs
- 5 dl all-purpose flour
- 2 dl milk
- 1 dl gingerbread spice mix
- 1 dl dried fruits (e.g., raisins or apricots)
- 1 dl nuts (e.g., walnuts or almond flakes)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 dl cocoa powder (for frosting)
- 2 dl powdered sugar (for frosting)
- 1 dl coffee (for frosting)
- 50 g butter (for frosting)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a bowl, beat the butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the dry ingredients (flour, gingerbread spice, baking powder, baking soda, and cocoa powder). Gradually add to the mixture, alternating with the milk.
5. Stir in the dried fruits and nuts.
6. Pour the batter into the prepared cake pan and bake for about 50-60 minutes, or until a toothpick comes out clean.
7. Allow the cake to cool before frosting.
8. For the frosting, melt the butter and mix it with coffee and powdered sugar. Add cocoa powder and stir until smooth.
9. Spread the frosting over the cooled cake and let it set before serving.
