A refreshing summer salad combining sweet watermelon and juicy tomatoes, perfect as a side dish or light main course.
Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 500 g cubed watermelon
- 2 large San Marzano tomatoes
- ½ cucumber
- 3 tbsp olive oil
- Juice of ½ lemon
- A pinch of fine sea salt
- Freshly ground black pepper to taste
- A handful of chopped mint
- A handful of chopped parsley
- A handful of chopped cilantro
- 100 g feta cheese
Instructions:
1. Peel the cucumber and watermelon, and rinse the tomatoes.
2. Cut all the vegetables into small, even-sized pieces.
3. In a bowl, season the salad ingredients with olive oil, lemon juice, salt, and pepper. Mix well and adjust the seasoning to taste.
4. Add the chopped herbs to the salad and toss to combine.
5. Cut the feta cheese into small cubes and add it to the salad.
6. Serve immediately as a refreshing side dish or light main course.
