Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 1 medium zucchini
- 2 garlic cloves
- 2 tbsp olive oil
- 100 g cherry tomatoes
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Cut the zucchini into thin strips or cubes.
3. Peel and finely chop the garlic.
4. Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for a few minutes.
5. Add the zucchini to the skillet and cook for about 5-7 minutes until it’s tender.
6. Add the cherry tomatoes and cook for a few more minutes until the tomatoes soften.
7. Toss the cooked pasta with the vegetables. Add reserved cooking water if necessary to prevent drying out.
8. Season with salt and black pepper. Stir in the grated Parmesan cheese until well combined.
9. Serve the pasta with fresh basil on top.
