Ingredients:

- 1 cup couscous
- 2 cups water
- 1/2 cucumber, diced
- 1 tomato, diced
- 1/4 red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste

Instructions:

1. In a pot, bring water to a boil and add couscous. Cover the pot and remove it from heat. Let the couscous steam for about 5 minutes.
2. Fluff the couscous with a fork to separate the grains.
3. Add the diced cucumber, tomato, red onion, parsley, and mint to the couscous.
4. In a bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
5. Pour the dressing over the salad and mix well.
6. Serve immediately or let it chill in the refrigerator to enhance the flavors before serving.
