Ingredients:
- 2 medium eggplants - 4 tablespoons olive oil
- 2 garlic cloves (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- Fresh basil (for garnish)
Instructions:
1. Cut the eggplants in half lengthwise and scoop out a bit of the flesh to help them cook evenly.2. In a bowl, mix the olive oil, minced garlic, salt, black pepper, and oregano.
3. Brush the eggplant halves with the oil mixture on both sides.
4. Preheat the grill to medium heat.
5. Grill the eggplants for about 5-7 minutes on each side, until they are tender and have nice grill marks.
6. Remove the eggplants from the grill and garnish with fresh basil before serving.
