Grilled Cabbage Steaks with Sour Cream Sauce

Description: Grilled cabbage steaks topped with crispy prosciutto and a tangy sour cream sauce make for a delicious and unique side dish or main course.
Ingredients:
- 1 head of early cabbage
- Olive oil
- A pinch of salt
- 1 tomato, diced
- 4 slices of prosciutto or bacon
Sauce:
- 1 cup sour cream
- 1-2 teaspoons mustard
- About 1 teaspoon honey or sugar
- 1 garlic clove, minced
- Lemon juice (or white vinegar)
- Chives, chopped
- Salt
- Black pepper
Instructions:
1. Prepare the sauce: Peel and finely chop the garlic clove and chop the chives. Combine all sauce ingredients in a bowl and mix well. Taste and adjust the seasoning as needed. Let the sauce sit for a few minutes to allow the flavors to meld.
2. Cut the cabbage in half, ensuring each half retains some of the core. Slice the cabbage into approximately 1-inch thick steaks.
3. Brush the cabbage steaks with olive oil and sprinkle with salt. Grill the steaks for about two minutes on each side until they are tender and have grill marks.
4. At the same time, grill the prosciutto or bacon until crispy.
5. Serve the grilled cabbage steaks topped with diced tomatoes, crispy prosciutto or bacon, and a generous dollop of sour cream sauce.
