Grilled Romaine with Hemp Parmesan

A delicious and refreshing salad made with grilled romaine lettuce and vegan hemp parmesan. Perfect as a light meal or a side dish. Preparation Time: approx. 2.5 hours
Serving Size: 2-4
Ingredients:
- 1 large romaine lettuce - Quality olive oil
- 1 tbsp hemp parmesan per serving (recipe below)

Hemp Parmesan:
- 2 tbsp nutritional yeast - 2 tbsp hemp seeds
- 1/2 tsp quality salt
- Pinch of cayenne pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions:
1. Rinse the romaine lettuce and remove any damaged leaves. Pat it dry gently with a kitchen towel. 2. Cut the lettuce in half lengthwise or divide it into several pieces. Place the cut side up on a dehydrator tray or a baking sheet lined with parchment paper.
3. Drizzle olive oil over the lettuce.
4. Prepare the hemp parmesan by mixing all the ingredients together. You can lightly grind the mixture in a mortar and pestle for better blending.
5. Generously sprinkle hemp parmesan over the lettuce.
6. Dehydrate the lettuce at 40°C (104°F) for about 2 hours. The salads are best enjoyed fresh, but they also taste good the next day when stored in the refrigerator.
