A refreshing and delicious salad that combines fresh vegetables with a rich Parmesan yogurt dressing. Perfect as a side dish for summer meals or as a light lunch.

Ingredients:
- 1 cucumber
- 2 tomatoes
- 1 bell pepper
- 1 red onion
- 100 g feta cheese
- 1/2 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 150 g Greek yogurt
- 50 g grated Parmesan cheese
- 1 garlic clove, crushed
- Fresh basil (for garnish)
Instructions:
1. Rinse and chop the cucumber, tomatoes, and bell pepper into bite-sized pieces.
2. Slice the red onion into thin rings.
3. Combine the vegetables in a large bowl.
4. Crumble the feta cheese over the vegetables.
5. In a small bowl, mix the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
6. Pour the dressing over the vegetables and toss well.
7. In a separate bowl, mix the yogurt, Parmesan cheese, and crushed garlic.
8. Serve the salad with the yogurt dressing on the side, garnished with fresh basil.
