A refreshing salad packed with protein-rich quinoa, fresh veggies, and the rich flavor of Parmesan cheese. Perfect as a light meal or side dish. Preparation Time: 30 minutes

Ingredients:
- 1 cup quinoa
- 2 cups water
- 100 g Parmesan cheese (shredded)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1 red onion (finely chopped)
- 1 cup fresh basil (chopped)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water in a fine mesh strainer.
2. In a pot, bring the water to a boil and add the quinoa. Cook for about 15-20 minutes, until the quinoa is tender and the water is absorbed.
3. Allow the quinoa to cool.
4. In a large bowl, combine the cooled quinoa, Parmesan cheese, cherry tomatoes, cucumber, red onion, and basil.
5. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
6. Pour the dressing over the salad and toss well to combine.
7. Serve immediately or let it chill in the refrigerator for a bit to enhance the flavors.
