Serving Size: 4 servings
Ingredients:
- 400 g fresh mushrooms (e.g., button mushrooms or chanterelles) - 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl heavy cream
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley (chopped)
Instructions:
1. Peel and chop the onion and garlic. 2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, sautéing for about 5 minutes.
4. Add the mushrooms to the pot and cook until they are soft and the moisture has evaporated, about 5-7 minutes.
5. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
6. Stir in the heavy cream and season with salt and black pepper. Heat the soup for a few more minutes.
7. Serve the soup hot, garnished with fresh parsley.
