Ingredients:
- 1 kg whole Baltic herring
- 1 dl rye flour (not coarse or semi-coarse)
- 1 tsp salt (heaping)
- Butter for frying (generously)
Instructions:
1. Clean the herring thoroughly and rinse them in cold water.
2. In a bowl, mix the rye flour and salt together.
3. Dip the herring into the flour mixture, ensuring they are evenly coated.
4. Heat the butter in a frying pan over medium heat.
5. Fry the herring in the butter until they are golden brown and crispy on both sides.
6. Place the fried herring on paper towels to absorb any excess fat.
7. Serve warm, accompanied by potatoes or salad.
