Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or guanciale
- 3 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Chop the bacon or guanciale into small pieces and fry them in a pan over medium heat until crispy.
3. Peel and finely chop the garlic. Add it to the pan with the bacon and sauté for one more minute.
4. Crack the eggs into a bowl and mix in the grated Parmesan cheese. Add salt and black pepper to taste.
5. Once the pasta is cooked, drain it and reserve some cooking water. Add the pasta to the pan with the bacon and garlic.
6. Remove the pan from heat and quickly stir in the egg mixture with the pasta. Mix well to lightly cook the eggs with the residual heat.
7. Add reserved cooking water as needed to achieve a creamy sauce consistency.
8. Serve immediately, garnished with fresh parsley if desired.
