These French-style vegetable patties are flavorful and healthy. They make an excellent side dish or main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup cooked chickpeas (or canned)
- 1/2 cup rolled oats
- 1 small onion (finely chopped)
- 1 garlic clove (minced)
- 1 carrot (grated)
- 1/2 cup fresh parsley (chopped)
- 1 tsp paprika powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil (for frying)
Instructions:
1. Mash the chickpeas in a bowl with a fork or an immersion blender until they are finely textured but not completely smooth.
2. Add the rolled oats, onion, garlic, carrot, parsley, paprika, salt, and black pepper to the chickpea mixture. Mix well.
3. Shape the mixture into patties, about 1 cm thick.
4. Heat the olive oil in a frying pan over medium heat.
5. Fry the patties for about 3-4 minutes on each side, until golden brown.
6. Serve warm, for example, with a salad or yogurt sauce.
