A creamy and delicious potato salad perfect for picnics and barbecues.
Preparation Time: 1 hour (plus chilling time)
Serving Size: 4-6 servings
Ingredients:
- 5 medium potatoes (starchy variety)
- 1 beef broth cube
- 1-2 pickles
- ½ cucumber
- 1 dl frozen or fresh bell pepper strips
- ½ pack of spices (e.g., salt and pepper)
- 1 dl mayonnaise
- 1 dl sour cream
Instructions:
1. Boil the potatoes with their skins in salted water until tender. Allow to cool and then peel.
2. Cube the cooled potatoes and place them in a large bowl.
3. Dissolve the beef broth cube in hot water and pour it over the potatoes.
4. Chop the pickles and cucumber into small pieces and add them to the bowl.
5. Add the frozen or fresh bell pepper strips to the potatoes.
6. Mix the mayonnaise and sour cream together, then pour the mixture into the salad. Stir well.
7. Season with salt and pepper to taste.
8. Let the salad chill in the refrigerator for at least one hour before serving.
