Delicious and easy to make, these potato pancakes are perfect for breakfast or a snack. Enjoy them with butter, honey, or syrup.

Serving Size: 4-6 servings

Ingredients:

- 500 g potatoes (e.g., Rosamunda)
- 50 g butter or margarine
- 0.25 tsp salt
- 1 dl all-purpose flour
- 0.5 dl whole wheat flour (or regular)

Instructions:

1. Peel, chop, and boil the potatoes in salted water until soft.
2. Drain the water and mash the potatoes.
3. Add butter and salt to the mashed potatoes and mix well.
4. Gradually incorporate the flours into the mixture, stirring until the dough is pliable and warm.
5. Roll out the dough on a floured surface to about half a centimeter thick and cut into desired shapes.
6. Fry the pancakes in a greased or parchment-lined skillet over medium heat for about 3-5 minutes on each side until golden brown.
7. Serve warm with butter, honey, syrup, or jam.
