Serving Size: 4 servings
Ingredients:
- 300 g whole grain pasta
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic, bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables are tender.
4. Add the halved cherry tomatoes and spinach to the skillet. Cook until the spinach has wilted.
5. Toss the cooked pasta with the vegetables. Season with salt and pepper.
6. Serve immediately with grated Parmesan cheese, if using.
