A delightful and visually stunning dessert that combines a crispy pavlova with soft whipped cream. Perfect for a Friday night or special celebrations. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 4 eggs- 1 dl sugar
- 1 dl potato flour
- 1 tsp baking powder
- 2 dl heavy cream
- 1 tbsp vanilla sugar
- 200 g fresh berries (e.g., strawberries, raspberries, blueberries)
- Powdered sugar for decoration
Instructions:
1. Preheat the oven to 175°C (350°F). Line a round cake pan with parchment paper.2. Separate the eggs into yolks and whites. Beat the egg whites until stiff peaks form, gradually adding the sugar.
3. Gently fold in the egg yolks. Add the potato flour and baking powder, mixing carefully until combined.
4. Pour the batter into the prepared pan and smooth the surface. Bake in the oven for about 25-30 minutes until the cake is golden brown and cooked through.
5. Allow the cake to cool completely.
6. Whip the heavy cream with the vanilla sugar until stiff peaks form.
7. Slice the cooled cake in half and spread whipped cream in the middle. Add berries on top of the cream.
8. Place the second cake layer on top and decorate with the remaining whipped cream and berries.
9. Dust powdered sugar over the cake before serving.
