A delicious bacon pancake recipe perfect for brunch or dinner. These light and flavorful pancakes are served with lingonberry jam.

Ingredients

- 2½ cups all-purpose flour
- ½ teaspoon salt
- 6 cups milk
- 3 eggs
- 200-300 grams bacon
- Butter, for cooking
- Lingonberry jam, for serving

Instructions

1. Cook the bacon in a skillet until crispy. Remove and place on paper towels to drain excess grease.
2. In a bowl, mix together the flour and salt. Add the eggs and milk, and stir until smooth.
3. Heat a frying pan over medium heat and add a knob of butter.
4. Pour about 1 cup of batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
5. Repeat until all the batter is used, adding the cooked bacon on top of the pancakes.
6. Serve warm with lingonberry jam.
