A hearty and creamy bacon potato salad that's perfect as a side dish for grilled foods or as a tasty snack with a baguette. This salad combines the flavors of potatoes and bacon beautifully, making it a great choice for summer gatherings or casual get-togethers. Preparation Time: 30 minutes
Serving Size: 4-6
Ingredients:
- 500 g new potatoes
- 200 g bacon
- 1 dl sour cream
- 1 dl mayonnaise
- 1 small red onion
- 3 tbsp fresh chives
- 1 tsp mustard
- Salt and pepper to taste
Instructions:
1. Boil the potatoes in salted water for about 15-20 minutes until tender. Drain and let cool.
2. Fry the bacon until crispy in a pan and drain excess fat on paper towels.
3. Chop the red onion and chives.
4. Cut the cooled potatoes into cubes and place them in a large bowl.
5. Add the cooked bacon, red onion, and chives to the bowl.
6. In a separate bowl, mix together the sour cream, mayonnaise, and mustard, then pour the mixture over the salad.
7. Season with salt and pepper and gently stir to combine, taking care not to mash the potatoes.
8. Let the salad chill in the refrigerator for about 30 minutes before serving.
