A delicious chocolate cake filled with blackcurrant mousse, perfect for celebrations. Preparation Time: 1 hour
Serving Size: 12 servings
Ingredients:
- 200 g dark chocolate
- 150 g butter
- 250 g sugar
- 4 eggs
- 250 g all-purpose flour
- 1 tsp baking powder
- 100 ml milk
- 300 g blackcurrants
- 200 ml cream
- 250 g fondant (pink, light green, purple)
- Small sugar flowers and baby shoes for decoration
Instructions:
1. Melt the dark chocolate and butter together in a saucepan over low heat. Let it cool slightly.
2. In a mixing bowl, beat the sugar and eggs until fluffy.
3. Add the chocolate-butter mixture to the sugar-egg mixture and mix well.
4. In a separate bowl, combine the flour and baking powder, then add to the batter alternately with the milk.
5. Pour the batter into a greased cake pan and bake at 175°C (350°F) for about 30-35 minutes. Let it cool.
6. Prepare the blackcurrant mousse by pureeing the blackcurrants and whipping the cream until soft peaks form. Combine the mixtures together.
7. Slice the cooled cake into three layers and fill with the blackcurrant mousse.
8. Cover the cake with fondant and decorate as desired.
9. Allow the cake to set before serving.
