Serving Size: 4 wraps
Ingredients:
- 4 whole wheat wraps
- 1 avocado
- 1 bell pepper (red or yellow)
- 1 cucumber
- 1 small red onion
- 1 cup cottage cheese or hummus
- 1 cup fresh herbs (e.g., basil, parsley)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Rinse and chop all vegetables: bell pepper, cucumber, and red onion.
2. Halve the avocado, remove the pit, and peel it. Mash the avocado in a bowl and season with salt and pepper.
3. Quickly warm the wraps in a pan or microwave.
4. Spread mashed avocado on each wrap, followed by cottage cheese or hummus.
5. Top with the chopped vegetables and fresh herbs.
6. Fold the edges of the wrap inward and roll tightly.
7. Cut the wraps in half and serve immediately.
