Serving Size: 4 patties
Ingredients:
- 2 cups cooked chickpeas (canned or boiled)
- 1 cup rolled oats
- 1 small red onion, finely chopped
- 1 garlic clove, minced
- 1 carrot, grated
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika powder
- 1 tablespoon olive oil for frying
Instructions:
1. Mash the chickpeas in a bowl until they are a fairly smooth mixture.
2. Add the rolled oats, red onion, garlic, carrot, parsley, lemon juice, salt, black pepper, and paprika. Mix well.
3. Shape the mixture into four patties.
4. Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side, until they are golden brown.
5. Serve warm with salad or in a bun.
