A delightful summer dish featuring local fish and fresh vegetables, perfect for a taste of Turku. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 portion of local fish (such as pike perch or salmon) - 200 g fresh vegetables (such as zucchini, bell peppers, and green beans)
- 1 dl olive oil
- 2 tbsp fresh herbs (such as basil and parsley)
- 1 lemon
- Salt and pepper to taste
- 4 servings of bread (such as ciabatta or baguette)
Instructions:
1. Prepare the fish: Season the fish fillets with salt, pepper, and lemon juice. 2. Heat the olive oil in a frying pan and cook the fish fillets on both sides until golden brown.
3. Chop the vegetables and add them to the pan with the fish. Sauté for a few more minutes until the vegetables are tender-crisp.
4. Add the chopped herbs to the pan and mix well.
5. Serve the fish and vegetables with fresh bread.
