A delightful and hearty lunch inspired by the flavors of Turku, featuring tender chicken breast, creamy mashed potatoes, and sautéed chanterelles. Preparation Time: 30 minutes
Serving Size: 2 servings
Ingredients:
- 200 g chicken breast fillets
- 2 dl mashed potatoes
- 1 dl sautéed chanterelles
- 1/2 dl cream
- 1 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Boil the potatoes in salted water until soft. Mash them and add cream and butter. Mix until smooth.
2. Season the chicken breast fillets with salt and pepper. Cook the fillets in a pan for about 5-7 minutes on each side until cooked through.
3. Stir the cream into the sautéed chanterelles and heat for a moment. Adjust seasoning with salt and pepper if necessary.
4. Serve the chicken breast fillets alongside the mashed potatoes and chanterelles. Garnish with fresh parsley.
