A refreshing salad combining sweet bell peppers and onions in a delicious marinade. Perfect as a side dish or a light meal. Preparation Time: 15 minutes + 2 hours chilling

Ingredients:
- 2 red bell peppers, sliced
- 1 small onion, rings
- 6 tablespoons olive oil
- 3 tablespoons white wine vinegar
- 1 clove garlic, minced
- 3 tablespoons chopped parsley
- Leafy greens (like lettuce)
- 1 hard-boiled egg
- Pepper to taste
Instructions:
1. In a bowl, combine the sliced bell peppers and onion rings.
2. In another bowl, mix together the olive oil, white wine vinegar, minced garlic, chopped parsley, and pepper.
3. Pour the dressing over the pepper and onion mixture and toss well.
4. Allow the salad to chill in the refrigerator for about 2 hours.
5. Serve the salad over a bed of leafy greens and top with chopped hard-boiled egg.
