Ingredients

- 2 ripe papayas
- 200 g bacon
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Lemon or lime juice (optional)

Instructions

1. Prepare the dressing: In a bowl, mix olive oil, honey, balsamic vinegar, salt, and pepper. Taste and let the dressing sit for a moment.
2. Cut the papayas in half lengthwise and scoop out the seeds with a spoon.
3. Slice the papaya halves, remove the skin, and chop into cubes if desired.
4. Roast the bacon slices in a 200°C (400°F) oven for about 15 minutes or until crispy.
5. In serving bowls, place the papaya cubes at the bottom and top with crispy bacon.
6. Drizzle with lemon or lime juice to taste and serve the dressing on the side.
