A delicious chicken pasta that is quick and easy to prepare, perfect for a weeknight dinner. Preparation time is about 30 minutes, serving size is for four.Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 300 g chicken fillets
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 400 g crushed tomatoes
- 1 tsp dried oregano
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside.
2. Cut the chicken fillets into strips. Heat olive oil in a skillet over medium heat.
3. Add the chicken strips to the skillet and cook until they are fully cooked. Remove the chicken from the skillet and set aside.
4. Chop the onion, garlic, and bell pepper. Add them to the skillet and sauté until softened.
5. Add the crushed tomatoes, oregano, salt, and pepper. Let it simmer on low heat for about 5 minutes.
6. Return the cooked chicken to the skillet and mix in the cooked pasta. Stir well and heat through.
7. Serve the pasta with grated Parmesan cheese and fresh basil on top.
