A delicious and spicy Indian dish that combines the flavors of spinach and cottage cheese, served warm with flatbread and rice. Preparation time is about 25-30 minutes, and the recipe serves four.

Ingredients

Lättänäleipä:
- 2 dl all-purpose flour
- 1 dl water
- A pinch of salt
- A splash of canola oil
Palak Paneer:
- 1 onion
- 2 garlic cloves
- A generous splash of canola oil
- Cumin seeds
- Ginger
- Cinnamon
- Cardamom
- Cloves
- Orange zest
- Chili powder
- 400 g pureed tomatoes
- 2 small bags of frozen spinach
- 1.5-2 dl water
- Sugar or ketchup
- Salt
- 200 g cottage cheese
- 2 dl full-fat plain yogurt
- Fresh coriander

Instructions

1. In a bowl, mix the ingredients for the lättänäleipä and knead into a smooth dough. Let it rest.
2. Start boiling water for the rice and cook according to package instructions.
3. Heat a pan, chop the onion and garlic. Add oil and sauté cumin seeds and ginger, then add the onion and cook for a couple of minutes.
4. Add the garlic and sauté for a few more minutes. Then add tomatoes, spinach, and water. Let it simmer for 5 minutes.
5. Roll out the lättänäleipä dough into four thin rounds and cook on a pan until both sides have black spots.
6. Season the palak paneer with sugar or ketchup and salt. Finally, add the diced cottage cheese and yogurt, stirring gently.
7. Serve the palak paneer warm with lättänäleipä and rice. Garnish with fresh coriander.
