A delicious plant-based dish featuring spinach and tofu, perfect for a nutritious meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g tofu (e.g., Jalotofu)
- 300 g fresh spinach
- 1 medium onion
- 2 garlic cloves
- 1 fresh chili (optional)
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp garam masala
- 200 ml coconut milk
- Salt to taste
- Oil for frying
Instructions:
1. Cube the tofu and fry it in oil in a pan until golden brown. Remove from the pan and set aside.
2. Finely chop the onion, garlic, and chili. Sauté them in the pan until the onion is soft.
3. Add cumin, turmeric, and garam masala. Cook the spices for a moment until they become fragrant.
4. Add the fresh spinach to the pan and cook until it has wilted.
5. Pour the coconut milk into the spinach mixture and stir well. Allow it to simmer on low heat for a few minutes.
6. Add the fried tofu to the sauce and mix. Heat for a moment longer.
7. Season with salt and serve with rice or naan bread.
