A delicious tofu-tomato sauce that combines flavorful tofu with fresh cherry tomatoes and a herb seasoning mix. Perfect served with pasta or rice.

Serving Size: 4 servings
Ingredients:
- 200 g firm tofu, cubed
- 2 tbsp herb seasoning mix
- 2 tbsp olive oil
- 2 onions, chopped
- 2 garlic cloves, crushed
- 200 g yellow cherry tomatoes, halved
- 2 tsp white balsamic vinegar
- 2 tsp lemon pepper
- 3 tbsp red pesto
- 200 g red cherry tomatoes, halved
- 1 tsp black pepper
- 2 carrots, diced
- 1 bunch arugula
Instructions:
1. Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until softened.
2. Add crushed garlic and sauté for another minute.
3. Add cubed tofu and cook until golden brown.
4. Stir in the herb seasoning mix, lemon pepper, balsamic vinegar, and red pesto. Mix well.
5. Add yellow and red cherry tomatoes along with diced carrots. Cook for about 5-7 minutes until the tomatoes are softened.
6. Season with black pepper and adjust taste as needed.
7. Serve the sauce with fresh arugula on top.
