A delicious Indian curry combining soft spinach and flavorful cottage cheese. This dish is easy to make and takes you on a culinary journey to India. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh spinach - 200 g cottage cheese (paneer)
- 1 large onion
- 2 garlic cloves
- 1 cm fresh ginger
- 2 tomatoes
- 1 tsp cumin seeds
- 1 tsp garam masala
- ½ tsp turmeric powder
- ½ tsp chili powder (to taste)
- 2 tbsp oil or ghee
- Salt to taste
- Water as needed
Instructions:
1. Rinse the spinach well and boil it in hot water for about 2-3 minutes. Drain and cool in cold water.2. Chop the onion, garlic, and ginger. Peel and chop the tomatoes.
3. Heat oil or ghee in a large pan and add cumin seeds. Once the seeds start to splutter, add onion, garlic, and ginger. Sauté until the onions are soft.
4. Add the chopped tomatoes and spices (garam masala, turmeric, chili powder, and salt). Cook until the tomatoes are soft.
5. Meanwhile, blend the cooked spinach into a smooth paste.
6. Add the spinach paste to the pan and mix well. Add water if necessary to achieve desired consistency.
7. Cut the cottage cheese into cubes and add to the curry. Cook on low heat for a few minutes.
8. Serve warm with rice or naan bread.
