A rich and creamy Indian cottage cheese dish. Preparation time: 30 minutes. Serving size: 4.
Ingredients:
- 250 g paneer (Indian cottage cheese)
- 1 dl cashew nuts
- 1 dl almonds
- 2 tbsp ghee or butter
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp ginger, grated
- 2 tomatoes, pureed
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp chili powder
- 200 ml cream
- Salt to taste
- Fresh coriander for garnish
Instructions:
1. Soak the cashew nuts and almonds in hot water for about 15 minutes. Drain and blend into a smooth paste.
2. Heat ghee or butter in a pan. Add the chopped onion and sauté until golden brown.
3. Add the crushed garlic and grated ginger, and sauté for another minute.
4. Stir in the pureed tomatoes and spices (turmeric, garam masala, chili powder). Cook until the mixture thickens.
5. Mix in the cashew-almond paste and cream. Let it simmer on low heat for about 5-10 minutes.
6. Cut the paneer into cubes and add to the sauce. Simmer for a few more minutes.
7. Season with salt and garnish with fresh coriander before serving.
8. Serve hot with rice or naan bread.
