Paneer Kofta in Spinach Curry

A delicious vegetarian dish featuring spiced paneer balls served in a creamy spinach sauce. Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 250 g firm unsalted paneer
- 2 large potatoes
- 15 raisins
- 15 cashew nuts (shelled)
- 1/2 tsp salt
- 1/2 tsp ground coriander
- 1/2 tsp cumin seeds
- 1/4 tsp chili powder
- 1/4 tsp turmeric
- 2 tbsp oil for frying
For the Spinach Sauce:
- 300 g fresh spinach
- 1 onion
- 2 garlic cloves
- 1 cm piece of ginger
- 1/2 tsp garam masala
- Salt to taste
- 1 tbsp oil
Instructions:
1. Boil the potatoes until soft, peel them, and mash in a bowl.
2. Add the paneer, raisins, cashew nuts, salt, ground coriander, cumin seeds, chili powder, and turmeric to the mashed potatoes. Mix well and shape the mixture into small round balls.
3. Heat oil in a frying pan and fry the koftas until golden brown. Set aside.
4. For the spinach sauce: Heat oil in a pot, add chopped onion, crushed garlic, and grated ginger. Sauté until the onion is soft.
5. Add the spinach and cook until wilted. Season with garam masala and salt. Blend the sauce until smooth.
6. Serve the koftas warm with the spinach sauce.
