A delicious and spicy Indian curry that combines paneer cheese, cashew nuts, and green vegetables. A quick dish perfect for everyday or festive occasions. Preparation Time: 30 minutes

Ingredients:
- 2 dl cashew nuts - 400 g coconut milk
- 70 g tomato paste
- 2 tbsp ghee (or butter or coconut oil)
- approx. 300 g paneer cheese
- 1 onion
- 2 garlic cloves
- 1 tbsp grated ginger
- 1-2 tsp red Thai curry paste
- 2 tsp curry powder
- 1 tbsp garam masala
- salt to taste
- fresh spinach leaves (or other green vegetables like broccoli or bell pepper)
- pinch of saffron (optional)
Instructions:
1. Start by sautéing the chopped onion in ghee or oil over medium heat until it is soft and slightly golden.2. Add the crushed garlic cloves and grated ginger to the pan. Sauté for another minute.
3. Add the cashew nuts, tomato paste, coconut milk, curry paste, curry powder, and garam masala to the pan. Mix well and let it simmer for about 5-10 minutes.
4. Cut the paneer cheese into cubes and add it to the sauce. Cook for a few more minutes until the paneer is warm.
5. Finally, add the spinach and stir until just wilted.
6. Serve the curry hot, for example with plain yogurt on the side.
