Crispy and flavorful pan-fried herring served with delicious mashed potatoes.

Ingredients

- Churned butter for frying
- 1 kg fresh Baltic herring
- 2 dl rye flour
- 1 tbsp fine sea salt
- Lemon pepper

Instructions

1. Remove the heads and entrails from the herring.
2. Rinse the fish thoroughly and pat them dry.
3. Melt the churned butter in a cast-iron skillet.
4. In a bowl, mix the rye flour, sea salt, and lemon pepper.
5. Dredge the herring in the rye flour mixture.
6. Fry the herring in the skillet slowly on both sides until they are beautifully browned.
7. Serve the pan-fried herring warm with mashed potatoes.
