Ingredients:
- 500 g fresh vendace
- 1 dl rye flour
- 1 dl all-purpose flour
- Salt to taste
- White pepper to taste
- Butter or oil for frying
*Vinegar Marinade:*
- 2 dl water
- 1 dl vinegar
- A pinch of sugar
- A pinch of salt
- Fresh dill
- 1 onion (sliced or finely chopped)
Instructions:
1. Clean and fillet the fresh vendace and set aside.
2. In a plate, mix rye flour, all-purpose flour, salt, and white pepper.
3. Coat the vendace fillets in the flour mixture, ensuring they are well coated.
4. Heat butter or oil in a pan and fry the coated fillets until golden brown on both sides.
5. Enjoy some of the vendace while they are still warm.
6. Place any remaining fried fillets in the refrigerator to cool.
7. In a pot, bring water, vinegar, sugar, and salt to a boil.
8. Add fresh dill to the mixture and let it cool.
9. Check the taste for freshness and tartness.
10. Pour the chilled marinade over the cooled vendace fillets, layering in the sliced or chopped onion.
11. Serve cold as an appetizer on the same or following day.
