Ingredients:
- 500 g vendace - 200 g potatoes
- 100 g fresh spinach
- 50 g pine nuts
- 50 g Parmesan cheese
- 100 ml olive oil
- 2 garlic cloves
- Salt and pepper to taste
Instructions:
1. Boil the potatoes in salted water until they are tender. 2. Meanwhile, prepare the spinach pesto. In a blender, combine the spinach, pine nuts, Parmesan cheese, olive oil, and garlic. Blend until smooth and season with salt and pepper.
3. Heat some olive oil in a pan and fry the vendace on both sides until golden brown and crispy. Season with salt and pepper.
4. Drain the boiled potatoes and lightly mash them. Mix the mashed potatoes with the spinach pesto.
5. Serve the fried vendace alongside the spinach pesto potatoes.
