Ingredients:
- 2 cups cooked rice
- 1 cup chickpeas (canned or cooked)
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 carrot, grated
- 2 tablespoons soy sauce
- 2 tablespoons oil (such as sesame or canola)
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions:
1. Heat the oil in a large frying pan or wok over medium heat.
2. Add the chopped onion and minced garlic, sautéing for a few minutes until softened.
3. Stir in the diced bell pepper and grated carrot, cooking for an additional few minutes.
4. Add the cooked rice and chickpeas to the pan, mixing well.
5. Pour the soy sauce over the rice and season with salt and pepper. Combine all ingredients thoroughly and cook for another few minutes until the rice is heated through.
6. Garnish with fresh cilantro or parsley before serving.
