Serving Size: 4 patties
Ingredients:
- 1 cup canned chickpeas (drained and rinsed)
- ½ cup rolled oats
- 1 small onion (chopped)
- 2 garlic cloves (mashed)
- 1 carrot (grated)
- 1 red bell pepper (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika powder
- 2 tablespoons olive oil for frying
Instructions:
1. Mash the chickpeas in a bowl with a fork or potato masher until mostly smooth.
2. Add the rolled oats, chopped onion, mashed garlic, grated carrot, chopped bell pepper, parsley, lemon juice, salt, black pepper, and paprika to the mashed chickpeas. Mix well.
3. Let the mixture rest for about 10 minutes to allow the oats to soften.
4. Shape the mixture into 4-6 patties.
5. Heat the olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
6. Serve with salad or bread.
