A delicious Thai dish that combines noodles, vegetables, and protein. Perfect for a weeknight dinner or a special occasion. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g rice noodles
- 2 tbsp oil (e.g., peanut oil)
- 2 garlic cloves, minced
- 1 carrot, julienned
- 1 bell pepper, sliced
- 200 g tofu or chicken, diced
- 2 eggs
- 3 tbsp fish sauce
- 2 tbsp tamarind paste
- 1 tbsp sugar
- 2 green onions, chopped
- 50 g peanuts, crushed
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions:
1. Cook the rice noodles according to the package instructions. Drain and set aside.
2. Heat the oil in a wok over medium heat. Add the garlic and sauté until golden brown.
3. Add the carrot and bell pepper, and stir-fry for about 3-4 minutes until the vegetables soften.
4. Add the tofu or chicken and cook until the protein is done.
5. Crack the eggs into the pan and scramble until cooked.
6. Add the cooked noodles to the pan. Pour in the fish sauce, tamarind paste, and sugar, and mix well.
7. Stir in the chopped green onions and crushed peanuts.
8. Serve warm, garnished with fresh cilantro and lime wedges.
